Sumada is a white soft drink made of bitter almonds and sugar. For the preparation of the sumada, the peeled almonds, after being ground or beaten, are left for some time in water which absorbs their juice. After draining, sugar is added to the boiled water until the syrup is done. The Sumada of Nisyros is considered one of the best in the whole country.
Kanelada is a traditional Greek drink that is also found in other islands of the Dodecanese. It is a cinnamon syrup, made of cinnamon, water and sugar that in order to drink it, you must first dissolve it in water. However, it can also be used as a syrup over yogurt or ice cream. Kanelada is refreshing and very digestive.
